Vermentino
Overview
Saverio is a name which runs through many generations of the Trimboli family, most recently from Salvatore’s father to his own son. The wines under this brand all speak of Europe’s great family of grape varieties including Vermentino (the Trimboli family was one of the first in NSW to plant this Italian variety), Grenache (originally from Spain) and Sangiovese (the famed grape of Tuscany). Salvatore’s father Saverio taught Salvatore to make wine, and this brand is a salute to a long-standing family tradition.
Colour
Light green with silvery hues.
Aroma
Vibrant citrus and crushed fresh apples.
Taste
Fresh and crisp with notes of zesty citrus fruits and crushed green apples. Dry, with just a pleasant hint of oily flavours from the ripe fruit.
Enjoy with
Goes well with dishes featuring herbs and spices. Try with fish dishes, chicken and quail. For vegans and vegetarians, enjoy with roasted vegetable dishes and flavoursome salads.

Oak Usage
Fermented with untoasted French oak staves and left on yeast lees for a further four months to increase mouthfeel and structure.
Region
Big Rivers Region, New South Wales. Grapes are all sourced from a single vineyard, and are only harvested for the Saverio. Sunny days and low yields of ripe fruit give this wine its aromatic bouquet and flavours.
