Sangiovese
Overview
The name Saverio runs through many generations of the Trimboli family, most recently from Salvatore’s father to his own son. The wines under this brand all speak of Europe’s great family of grape varieties including Sangiovese (the famed grape of Tuscany), Grenache (thought to originally be from Spain) and Vermentino (the Trimboli family was one of the first in NSW to plant this Italian variety). Salvatore’s father Saverio taught Salvatore to make wine, and this brand is a salute to a long-standing family tradition.

Deep purple-red.
Aroma
Notes of cherry and blackberry, with hints of spicy oak.
Taste
Full bodied, with cherry and blackberry flavours supported by deftly balanced acidity and firm ripe tannins.
Enjoy with
Its acidity makes Sangiovese a real food wine. Pairs perfectly with pork, grilled meats and BBQs. Try it with tomato-based pasta and pizza – a great choice for vegetarians and vegans.

Oak Usage
Fermented in new and three-year-old fine-grained oak barriques for up to four months, then with untoasted French oak staves for further six months to develop mouthfeel and structure.
Region
Mt Lofty Region, South Australia. Grapes are sourced from specially selected vineyards in the Mt Lofty region which are harvested only for Saviero Sangiovese. Varying micro-climates and soil types contribute to a wine with pronounced character and flavour.
